There is no question that sometimes chicken can turn out somewhat dry and tasteless and that is why we need the Secrets to a grilled chicken marinade revealed. If we are not careful when we are grilling, yes, our chicken can becme dry, stringy, tasteless, and almost unpalatible. However, one good thing which we can do to avoid that is to use a good, grilled chicken marinade.
Marinades are so good for many reasons. They add flavor, they increase moisture when cooking, and since the meat is more moist while grilling it does not burn so bad. We can literally increase the odds ten-fold or better at becoming that BBQ king of our neighborhood by utilizing a good chicken marinade when we grill. Just one caveat, or note to remember, and I touched on it the other day: that would be to not let chicken marinate too long when using an acid such as lemon juice in there. Remember, that would cause it to start to cook and then the chicken could turn out mushy. That would not be a good thing.
Here are a couple of good grilled chicken marinade:
* 1/2 cup vegetable oil
* 1/2 bottle of Worcestershire Sauce
* 2 T Italian seasoning; i.e., basil, oregano, marjoram, parsley, etc.
* 1 T garlic powder
* Salt and pepper to taste
Now I think it is Lea & Perrins that makes a good chicken marinade all by itself in a bottle. If you are in a pinch and you
need this right away, they will always do. But one of the good things about marinades is that once you get a few things that you need to create your own marinades. then they will go a long, long way. So with just a few ingredients in your fridge you can always create so many different marinades to experiment with.
Here is a good one for wings:
* 1/2 cup pineapple juice
* 1/2 cup soy sauce
* 1/4 cup oil, vegetable
* 2 tsp. ginger
* salt and black pepper to taste
* and of course, my favorite, garlic. Say around 1 and 1/2 tsp minced.
